post surgery

Hi Everyone,
This is just a little note to let you know we are back from Halifax
Everything went pretty good despite a few surprises.
The surgeons found another tumor wrapped around
the facial nerves. They had to do quite a bit of digging and manipulating to
get it out. They feel they got most of it but I will have to go for radiation
treatment asap. At this point I have most movement back but there is some weakness on the left side of my
face. I can't feel my left ear at all and there is patchy numbness on that side.
There is quite a depression in my neck (although it is hard to see right now because it is swelled)
where they removed the gland.
We are both very happy to be home and are relieved to be on the road to recovery.
We thank you for all your prayers & good wishes.
I'm still hoping to be back in the kitchen on July 7th, but I will keep you posted.
Thank for your patience.
Love Karin & Mike

Menu for Tuesday, June 17th, no deliveries until July 8th

Hello,
I'm sorry to tell you that I will be out of commission for a couple of weeks. I recently found a lump in my neck which turns out to be a rare form of cancer,
so we're heading to Halifax early Tuesday morning to have it removed. I'm not yet sure what kinds of treatment I may need after the surgery. Hopefully none. I'm feeling very positive about it and hope to be back in the kitchen on July 7th for July 8th delivery. I hope this doesn't cause you too much inconvenience.
Meanwhile Margaret will be maki
ng this Tuesday's deliveries. Her cell phone is 940.3873. There will not be any deliveries on Thursday this week but someone will be at the Farmer's Market on Saturday's until I'm back. I'm so lucky to have great family & friends.

So, if you'd like to see what's up in the kitchen for Tuesday, read below

Menu for Tuesday, June 17th, 2008

The CHICKPEA AND ARTICHOKE SALAD is one of my favorites. It is chickpeas and marinated artichokes with sauteed onions, sun-dried tomatoes and a lemon-olive oil dressing.

The TOFU NUT LOAF is back this week. This is mashed tofu with almonds, flax and sunflower seeds, organic brown rice, wild rice, veggies and herbs baked together in loaf and served with some tasty MUSHROOM GRAVY.

The CAULIFLOWER & LENTIL PALAK is pretty yummy. We use red, green & brown lentils and cook them with cauliflower, tomatoes, onions, spinach & some aromatic Indian spices and we added some of our home-made soy yogurt to make it creamy and keep it vegan as well as gluten-free. This is served on BROWN BASMATI RICE

The LIGURIAN BREAD & ROASTED GARLIC PENNE is whole wheat penne in a sauce made from bread, olive oil, red wine vinegar and roasted garlic. For the vegetarians we added some NUTS & SEEDS or you could have this with GRILLED CHICKEN.

O.K. you eggplant lovers, here is a treat for you....the SRI LANKAN TOFU & EGGPLANT CURRY. This also has tomatoes, coconut milk, hot peppers, some tamarind and curry spices. We're offering this on BROWN BASMATI RICE.

Our OVEN-BARBECUED CHICKEN is marinated over-night and then baked in our own Barbecue sauce, served with SPUDS.

Do you remember the SPINACH & SUNDRIED TOMATO STUFFED STEAK? We marinated the beef and stuffed it with the spinach, sun-dried tomatoes and some Parmesan and then grilled it. It is served with OVEN ROASTED POTATOES.

Lori loves to make the CARIBBEAN PINEAPPLE CHICKEN. This is chicken breast pieces baked with fresh pineapple and Caribbean spices and SWEET POTATOES and we serve it on a bed of BROWN RICE & BEANS.

The
VEGETABLE & CHEESE TOPPED MEAT LOAF is a bit of an experiment. It is meat loaf made with lean ground beef, eggs, onions & seasonings. This is topped with a mix of zucchini, mushrooms, grated carrot, our tomato sauce, Parmesan & Mozzarella cheeses and it's all served with OVEN ROASTED POTATOES.

I will send you an update on my health when I return from Halifax.
Take care....
Karin
