finished radiation!!

Hello There,
I'm finally finished my radiation treatments!!!
All 33 of them and now that it is all over, I can say
"it wasn't so bad".
I was very lucky to have such great support and the
side effects haven't been too bad.

Right now I am experiencing quite a bit of vertigo and some nausea and I've been advised by
very smart people to not work at all for a bit while I get over this last hump so
there won't be anyone at the market this week or next and of course no meals & deliveries for a bit.

I will let you know when we are back in action.
You have been great, we appreciate all the good messages
and support and soon this will all be behind us.

Menu for Tuesday, Sept. 9

Hello There,
I'm feeling pretty good this week.
I have 9 more treatments to go so now I'm into the single digits. Yippee!
I'm up for cooking this week and Lori is here to assist me. (Actually, it is me
assisting her)
Ian will be making the deliveries on Tuesday and there won't be any deliveries on Thursday
or any Thursdays for the next while.

ere is the Menu for Tuesday, September 9th, 2008

If you are a fan of sushi, you will enjoy the SUSHI RICE & VEGETABLE SALAD. We use organic brown rice with some crunchy veggies & pickled ginger and its all dressed with some seasoned rice vinegar with a little hint of wasabi, garnished with sesame seeds and crumbled nori.

It must be time to make your favorite SPICY THAI NOODLES WITH TOFU & PEANUT SAUCE. This is a vegetable stir-fry with rice noodles and a spicy peanut sauce topped with baked peanut tofu.

Here is a treat for you.... MAKENA'S BLACK BEAN & SPINACH. We cook the beans with spinach, onions and awesome seasonings and we serve it on BROWN BASMATI RICE.

We picked up more fresh basil and great vegetables at the market so it is
CAPPELLINI WITH FRESH PESTO & VEGGIES. We put toasted almonds in our pesto and add extra for protein unless you would prefer GRILLED CHICKEN.

Here is your comfort food...the CHICKEN STEW WITH DUMPLINGS. This is a thick flavorful chicken stew with lots of vegetables, topped with fresh herb dumplings. We are offering this without the dumplings if you are looking for gluten-free or dairy-free.

The APRICOT & GINGER GLAZED CHICKEN is always a good seller. It's not too sweet and the ginger gives it an extra burst of flavor. We are serving this on some JASMINE RICE.

I have some nice fresh pineapple and thought it would go great in BEEF & PINEAPPLE KABOBS. This also has some curry, ginger & garlic and it's served with NEW POTATOES or RICE.

The SALISBURY STEAK WITH POTATOES AND GRAVY is your comfort meal of the week. This is patties made from lean ground beef and some seasonings, slow cooked in a tasty onion gravy and served with vegetables and new potatoes.

Menu for Thursday, Sept 4th

Hi!
Sorry we couldn't make you meals last week.
Things are better this week.
I'm starting to feel the effects of the radiation a bit more now.
I have no saliva and my taste buds are all wonky.
But the long week-end was a help.
Margaret is on her way to Ireland for a month so
Ian and I will be making deliveries on Thursday.

Menu for Thursday Sept. 4th, 2008

HAIDA'S TABOULI SALAD has bulgar, tomatoes, cucumber, chickpeas, shredded carrots, fresh herbs and a lemon-olive oil dressing. Yummy!!

For the MUMBAI CURRIED TOFU, we stir-fry the marinated tofu and serve it with vegetables in a yummy sauce with ginger, lime, coconut, curry & mango. This is served on BROWN BASMATI RICE.

Our BLACK BEAN & MUSHROOM BURRITOS also has other vegetables and lots of spice. These guys are vegan but not gluten-free.

We have lovely fresh basil from the market so we're making PESTO CHICKEN. You can have this with either NEW POTATOES or RICE .

We have fresh broccoli from the Farmer's Market for GINGER BEEF BROCCOLI. It is a nice beef stir-fry with some onions and garlic served on your choice of either RICE or NOODLES.

The
GROUND BEEF CHOP SUEY is lean ground beef and vegetables in a yummy Asian sauce served with either RICE or NOODLES.

We expect to be back in the kitchen next Monday for Tuesday delivery only.
