Menu for Dec. 16, Season's Greetings!

Season's Greetings to you all!
This is our last menu before the holidays. We will be at the market this Saturday and again on Tuesday the 23rd.
Then we are hanging up our aprons for a couple of weeks while you are feasting on Turkey and chocolate. We figure by Jan 6th you will be ready to "Eat Well" again so keep an eye out for our menu.
We are still taking orders for
"Sticky Date Pudding".
You have the choice of the 8x8 for $28 or 9X11 for $45. 8 oz of extra sauce is $5
Let me know if you want it for Saturday the 20th or Tuesday the 23rd.

We wanted to make you some seasonal or favorite treats this week. Check them out below.

How about SWEET POTATO, CRANBERRY & GRAINS SALAD for seasonal? We sauteed the sweet potatoes with some onions and garlic and added it to a mix of Thai Red Rice & quinoa with the cranberries, peppers, fresh dill and a dressing of lemon juice and maple syrup. This salad is gluten-free.

Our TOFU NUT LOAF is a mix of tofu, wild and brown rice, almonds, sunflower seeds and lots of vegetables & seasonings. This comes with our delicious MUSHROOM GRAVY.

It has been much too long since we have offered MAKENA'S BLACK BEAN & SPINACH. I can't think about this meal without drooling.
We cook the beans with spinach, onions and awesome seasonings and we serve it on BROWN BASMATI RICE.


Do you remember the CHEESY VEGETABLE PIE. This is broccoli, cauliflower & red peppers & mushrooms baked in a batter with some Cheddar. cream cheese and herbs. The green of the broccoli and red of the peppers make it look Christmasy.

MEDITERRANEAN PENNE is pasta tossed with spinach, sun-dried tomatoes, and artichokes with a bit of our tomato sauce and it's garnished with some toasted pine nuts or if you prefer, you can have this with GRILLED CHICKEN.

Still trying to come up with Christmasy (I don't think that is a word) dishes this week, I thought the following combination would be interesting...
WILD RICE, CRANBERRY & MUSHROOM STUFFED CHICKEN. This comes with MASHED POTATOES.

The CHICKEN ATHENA is a favorite that hasn't made it to the menu in far too long. This is Chicken cooked with fennel, tomatoes, black olives and Feta Cheese. It is served with either BROWN RICE or ROASTED POTATOES.

The SPINACH & SUN-DRIED STUFFED TOMATO STEAK is marinated sirloin tip steak stuffed with a mix of spinach, sun-dried tomatoes, herbs and Parmesan cheese. It is served with MASHED POTATOES or RICE.

Menu for Tuesday, Dec. 9th. Taking orders for Sticky Date Pudding

Hello again,
We hope you enjoyed the week-end.
We are all set to make your "Sticky Date Pudding" again this year.
You have the choice of the 8x8 for $28 or 9X11 for $45. 8 oz of extra sauce is $5
The Farmer's Market will be open for a special day on Tuesday, December 23rd this year so we can have your Sticky Date Pudding then or on Saturday the 20th. Let me know.

We have some great choices for you this week, check them out and let us know what you'd like us to drop off to you on Tuesday, or you can pop into Timothy's any day and pick it up.

Our ORGANIC QUINOA TABOULI SALAD uses quinoa (a high protein, gluten-free grain) instead of bulgar, with tomatoes, cucumbers, red onion, parsley and a lemon-olive oil dressing.

The SWEET POTATO CAKES is a favorite of the Farmer's Market clients. This is sweet potatoes, millet and vegetables made into patties and baked. If you haven't tried this yet, now is your chance.

I know how much you love the BAKED FALAFELS IN WRAPS so here it is again. We use chickpeas with lots of great spices for our falafels. We top it with a yummy tahini sauce and garnish it with a mix of tomatoes, onions & parsley.

Our
LOW-FAT VEGETABLE TETRAZZINI is whole wheat spaghetti in a creamy yet low-fat white sauce with lots of vegetables and topped with Mozzarella Cheese. You could also have this item with CHICKEN.

Our SESAME TOFU LOAF is mashed tofu, with vegetables, crushed corn chips, tahini & seasonings. We are always very pleased with this one. You can enjoy this with either ROASTED POTATOES or RICE.

NORMANDY CHICKEN is chicken breasts and thighs cooked with some onions and celery and apple in a creamy sauce. This is a real nice comfort food meal that we serve with MASHED POTATOES OR BROWN RICE.

The CURRIED BEEF & BROCCOLI has lots of flavor and a bit of spice. We are serving it with BROWN BASMATI RICE or MASHED POTATOES.

The PERSIAN HONEY-SPICED CHICKEN is marinated chicken that is grilled, then drizzled with honey and then dipped in a mix of ground up nuts, seeds & spices. We are serving this with BROWN RICE or POTATOES.

LEBANESE BAKED KIBBEE is lean ground beef mixed with cooked millet, toasted almonds, onions and seasonings and pressed into a pan and baked. It comes with RICE & LENTIL PILAF.

Menu for Dec 2

Greetings again from the Eat Well Kitchen, where we are always happy to cook up great goodies for you.
Find out what we have on this week by reading below and tell your friends!

Raymond Loo who is a potato expert, recommended that I use his organic Fabula potatoes for the FRENCH POTATO SALAD. This is potatoes, peppers, celery, green onions & fresh dill with white wine vinegar, grainy mustard and herbs.

If you are looking for some delicious protein, give the TOFU, QUINOA & S
WEET POTATOES a whirl. This is a nice light meal and quinoa is so good for you and tasty too.

Here is something yummy, especially if you are a fan of caramelized onions, the WHITE BEAN & VEGETABLE CASSOULET has a tomato base and lots of great flavors. The topping is June-Ellen's Spelt-Carrot bread crumbs.

O.K. this week's pasta dish is a very good one. It is WHOLE WHEAT SPAGHETTI, tossed with caramelized onions seasoned with some fresh rosemary, some sun-dried tomatoes and spinach. For the vegetarians, you get some nuts for protein and if you like GRILLED CHICKEN, we have that too.

I'm a fan of the INDONESIAN TOFU, VEGETABLE & RICE STIR-FRY. It is marinated tofu stir-fried with peppers, onions and carrots and organic brown rice with a zesty peanut sauce.

I know some of you have been waiting for me to make you KEN'S "FULL OF CHEESE" VEGGIE SQUARES so here it is. This is a low carb, low fat, gluten-free yet very yummy meal that is a mix of almost every vegetable I can find, covered with Mozza, Cheddar, Parmesan & Feta cheeses and baked.

T
he herbs I picked up this week match the song from SIMON & GARFUNKLE's Parsley, Sage & Rosemary & Thyme. So those are the herbs we are tossing with the CHICKEN before roasting. We're serving this with SCALLOPED POTATOES or RICE.

Our other chicken choice is CHICKEN BIRYANI. This is a traditional Pakistan/Indian dish of tender morsels of chicken in a creamy, spicy blend of onion, garlic, ginger, tomatoes, soy yogurt and spices served with SPICED RICE. This meal is both gluten-free and diary-free.

The BEEF, CHEESE & VEGETABLE SWIRLS are pastries made from whole wheat and unbleached white flours filled with lean ground beef, tomatoes, peppers, onions, cheddar and seasonings.

The SAUSAGE SHEPHERD'S PIE has a base of Italian sausage and vegetables lightly seasoned with some curry and it is topped with a mix of mashed SWEET POTATOES & SQUASH.

We are gearing up for Christmas. We intend to make your "Sticky Date Pudding" again this year.

Menu for Tuesday, Nov. 25

Hi There,
Well, it looks like winter is here. It's a bit soon for me. I'm having trouble adjusting to the cold.
But it is warm and cozy here in the kitchen where we are cooking up the following for you.....

Here is a yummy new salad for you to try...the
BROWN RICE SALAD WITH FRUIT & SEEDS is organic brown rice, some sunflower, sesame & pumpkin seeds, some dried cranberries and currant with a dressing of lemon, honey & olive oil.

Here is some comfort food to try...the
TOFU & VEGETABLE POT PIE. This is marinated tofu and lots of Farmer's Market vegetables cooked in a savoury herb sauce, topped with a vegan biscuit crust. This meal is vegan and we have some without the crust if you are looking for gluten-free.

The NORTH AFRICAN CHICKPEAS is an lovely yet unusual way to enjoy chickpeas. We cook chickpeas with onions, sweet potatoes, apricots, raisins, garlic, ginger and season it with cumin, cinnamon, chili peppers & lemon. We garnish it with almonds and serve on MILLET.

I love PUTTANESCA SAUCE and it has been way too long since we've had it. This is sauteed peppers, onions, tomatoes, black olives & capers with a little bit of spice and we're serving it on ANGEL HAIR PASTA.

As you may guess, the BANANA-TOFU CURRY has some sweetness to it with the bananas, plus coconut and raisins but you might find a little heat too. We're offering this with some BASMATI RICE.

For the CHICKEN WITH 40 CLOVES OF GARLIC, we cooked the garlic for a long time to make it sweet and mild and added the chicken with some stock and a bit of white wine. We're serving this with ROASTED POTATOES or RICE and squash.

It must be time to offer this favorite again...the TERIYAKI BEEF STIR-FRY is cooked with lots of crunchy vegetables in a slightly sweet Asian sauce served with your choice of RICE or NOODLES.

We know how much you enjoy the MOROCCAN meals we make so how about the SPICED CHICKEN. The main spices used in Morocco are cumin, coriander, cinnamon and sometimes nutmeg. We are adding a bit of orange juice to this meal and you may have it with RICE or ISRAELI COUSCOUS.

The CURRIED GROUND BEEF, PEAS & POTATOES is lean ground beef cooked with potatoes, onions, peas, ginger and garlic with plenty of great Indian spices served on some BROWN RICE

Menu for Thursday, Nov. 20

Hi There,
I'm sorry we weren't able to get meals to you today (Tuesday), but I'm doing much better and will be cooking up goodies for you to deliver on Thursday. Check out the menu below....

Your favorite is back! The GREEK PASTA SALAD. This is fusilli pasta with vegetables, black olives and Feta Cheese tossed with our own dressing. We also offer this with GRILLED CHICKEN.


We put away some basil and with it we will offer you the LINGUINE WITH CREAMY PESTO SAUCE & VEGGIES. This is a low fat sauce bursting with flavor. We also have it with GRILLED CHICKEN.

Margaret made us this THAI CURRIED TOFU & RICE NOODLE POT the other day and it was delicious. I asked her to do the same for you. This is gluten-free rice noodles in a zesty coconut curry sauce with tofu. It is garnished with cilantro & lime.

RED LENTIL DAHL is my version of comfort food. This is red lentils cooked with Indian spices and coconut milk with vegetables & spinach and served on BROWN BASMATI RICE.


The TOFU PAELLA is a Spanish vegetable and rice dish using saffron as a main seasoning. We are putting fresh fennel in our version along with some marinated tofu.


Our version of CHICKEN SCHNITZEL is chicken breast pieces dredged in chickpea flour and lightly pan fried, then we add a yummy mushroom sauce made with fat free sour cream. Would you prefer this with EGG NOODLES or POTATOES?

The SLOW & SWEET STEAK is sirloin tip beef in a slightly sweet tomato & molasses sauce with some smoked paprika cooked till tender. It comes with your choice of POTATOES or RICE.


Here is a favorite of many...the GINGER-CASHEW CHICKEN. The chicken and vegetables are cooked in a wok with toasted cashews and a yummy ginger sauce and it's garnished with pickled ginger. This is served on JASMINE RICE.

We made the SALISBURY STEAK from lean ground beef, egg and some seasonings. They are served on MASHED POTATOES, VEGETABLES AND ONION GRAVY.

Menu for Thursday, Nov. 13

Hi There,
That is my great-nephew "Jude" in the picture with me. Isn't he a cutie?

Did you enjoy that extra day off. It's kind of nice to get one in mid week.
Check out below what we have going on this week and email us your order.

Our MEDITERRANEAN COUSCOUS SALAD is whole wheat couscous, sun-dried tomatoes, pine nuts, Feta Cheese and herbs tossed with fresh Lemon juice and olive oil.

The TOFU & VEGETABLE QUICHE is completely vegan and it has fresh broccoli, cauliflower, mushrooms, onions and sun-dried tomatoes in it as well as fresh herbs and it is all in a whole wheat crust.

I hear that it has been too long since we have offered the ZESTY BEANS, RICE & LENTILS. This is black beans, organic brown rice and green lentils cooked with onions, tomatoes and corn and garnished with yummy salsa.

Someone was asking me when I was going to make the SPICY THAI NOODLES WITH TOFU & PEANUT SAUCE again, so here it is. We use rice noodles to keep it gluten-free and add it to stir-fried veggies and our spicy peanut sauce and finish it off with marinated tofu. "Those who like it, like it alot"!

The cheeses in the BAKED PENNE WITH 3 CHEESE SAUCE AND BROCCOLI are Cheddar, Parmesan and Cream cheese. This dish is also available with CHICKEN.

We are using rice noodles for the ROASTED VEGETABLE LASAGNA for those of you who wish GLUTEN-FREE. It still has all the great flavor!

The BALSAMIC CHICKEN WITH BOSC PEARS is sauteed chicken breasts and bosc pears simmered in a tasty balsamic vinegar sauce. We are serving this with either JASMINE RICE or Mashed Potatoes.

The PEPPERY PEPPER STEAK is sirloin tip strips stir-fried with sweet peppers & onions and some green & black peppercorns. You can enjoy this with either RICE or SPUDS.

Our BETTER BUTTER CHICKEN is healthier than the traditional version which uses butter and cream. This is an Indian dish with lots of spices and flavor. It is tomato based and we use yogurt to make it creamy. This comes with BROWN BASMATI RICE

We have some fresh pineapple so how about SWEET & SOUR PINEAPPLE MEAT BALLS. The meatballs are made with lean ground beef, egg and seasonings. They are in a yummy pineapple sauce with onions and peppers servedwith ORGANIC BROWN RICE.

Menu for Tuesday, Nov. 4th

Hi There,
What did you think of that snow? I'm not quite ready for it.
Next Tuesday is Rememberance Day so we won't be delivering that day, instead we will cook on Wednesday and deliver on Thursday.
Read below to find out what we have going on this week.

The CHICKPEA AND ARTICHOKE SALAD is one of my favorites. It is chickpeas and marinated artichokes with sauteed onions, sun-dried tomatoes and a lemon-olive oil dressing.

The TOFU KORMA is tofu cooked with some great Indian spices and ground cashews, onion, garlic & ginger. It comes with steamed spinach on BROWN BASMATI RICE.

I would like to recommend the VEGETARIAN MOUSSAKA. It is one of my favorite ways to eat eggplant. This Greek layered dish has sliced potatoes, then there is a tomato-chickpea mixture, then some roasted eggplant and it is topped with a bechamel sauce.

The MEDITERRANEAN PENNE is whole wheat penne tossed with some olive oil, garlic, spinach, tomatoes, kalamata olives, pine nuts for the vegans, Feta Cheese for the vegetarians, & GRILLED CHICKEN for the rest.

Here is a good healthy vegetarian meal that is delicious yet low-cal. The HARVEST STEW is lots of vegetables in a tasty sauce topped with light HERB DUMPLINGS.

The
OVEN BARBEDUCED CHICKEN is marinated chicken breast pieces baked in our yummy home-made barbecue sauce, then baked with SPUDS & sweet potatoes.

Do you remember the SPINACH & SUNDRIED TOMATO STUFFED STEAK? We marinated the beef and stuffed it with the spinach, sun-dried tomatoes and Parmesan Cheese and then grilled it. It is served with OVEN ROASTED POTATOES.

The CURRIED MANGO COCONUT CHICKEN is chicken breast pieces cooked in a zesty coconut curry sauce with some fresh mango. It is served on a bed on JASMINE RICE.

Menu for Tuesday, Oct. 28

Greetings again from the Eat Well kitchen,
We're up for cooking some yummy meals for you.
Read all about it below....

This salad seems kind of Fallish to me. For the QUINOA & SWEET POTATO SALAD we sauteed the sweet potatoes with some onions and garlic and added it to the quinoa with some peppers, cilantro and a dressing of lemon juice and maple syrup.

We marinated the TOFU in a ZESTY CURRY & LEMONGRASS marinade and seared it in the wok with veggies and put it all on a bed on BROWN BASMATI RICE.

We have Lori on CABBAGE ROLLS this week. You have 2 choices, either VEGETARIAN or BEEF & RICE. The VEGETARIAN has chickpeas, rice, veggies and nice seasonings. For the beef we substituted the chickpeas for lean ground beef. Both are slow-cooked in the oven with our own tomato sauce.

Our CHEESY PASTA PRIMAVERA is rotini and lots of stir-fried veggies in a creamy tomato sauce topped with some herbed Mozzarella and Feta Cheeses. Of course we have this with CHICKEN too.

We marinate the tofu for the HONEY GARLIC TOFU KABOBS overnight to intensify the flavor and put the it and some vegetables on skewers and grilled them with our special honey-garlic sauce. This is served on a bed of RICE PILAF.

The CHICKEN & VEGETABLE SHEPHERD'S PIE was so very popular the last time we made it that we're happy to make it for you again. This is chicken cooked with vegetables in a tasty sauce and topped with whipped potatoes. Talk about comfort food!

SLOW-COOKED POT ROAST WITH POTATOES AND GRAVY is our comfort food of the week. We are slow cooking the roast with potatoes and vegetables and serving it with a yummy gravy.

The CARIBBEAN CHICKEN WITH SWEET POTATOES is chicken marinated with Caribbean spices and then cooked with fresh pineapple and sweet potatoes. It is served on a bed of Brown rice with Beans.

Menu for Tuesday, Oct 21

Greetings again from the Eat Well kitchen,
We're up for cooking some yummy meals for you.
Read all about it below....

We use rice noodles for the
SESAME NOODLE SALAD along with lots of crunchy vegetables and a tasty dressing made with tahini.

You enjoyed the WEST INDIAN LENTIL-CHEDDAR ROTI the last time we had it, so it is back. This is lentils, sweet potatoes, Cheddar cheese and spices in a whole wheat wrap. If you order this, the best way to reheat it is to fry it in a dry skillet so the wrap gets crusty.

With all those great harvest vegetables & herbs I'm seeing at the Farmer's Market, I had to get them so we can roast them for the HERB ROASTED VEGETABLES & TOFU.

We have some very nice whole wheat spaghetti that I want to offer in SPAGHETTI WITH ROASTED PEPPER PESTO. The pesto uses roasted peppers, garlic, basil, olive oil and toasted almonds, so this is dairy-free. The vegan version has some extra almonds for protein or you could hav it with GRILLED CHICKEN.

We will be sure to make plenty orders of FETA & SPINACH STUFFED CHICKEN since it is so popular. We are serving it with some ROASTED POTATOES and veggies.

The BEEF MADRAS is slow-cooked beef with tomatoes, peppers, onion and curry paste. We are serving this with POTATOES or BROWN RICE

I love to make the CHICKEN ZARZUELA for a couple of reasons. One is that it is a very nice meal of Spanish origin with chicken, onion, tomatoes, green olives, saffron and it is thickened with ground almonds but also because I love names with "Z" in them and this one has 2 of them. This meal is served with either BROWN RICE or POTATOES.

The CHEESY BEEF & RICE CASSEROLE is lean ground beef combined with brown rice, onions, peppers, tomatoes and sour cream and topped with Cheddar Cheese.

Menu for Thursday, Oct. 16

Hello There,
Did you all have a good Thanksgiving? That extra day off is a real bonus isn't it?
We are back in the kitchen Wednesday for Thursday delivery.

To celebrate this Fall season, we are offering you AUTUMN WILD RICE, WALNUT AND BROCCOLI SALAD. This salad has a yogurt, lemon juice, olive oil dressing.

It feels like BAKED BEANS season. I make KARIN'S ZESTY or REGULAR. Both types have onions, celery and carrots, with molasses, brown sugar and and maple syrup in it as well as seasonings, but we don't put tomatoes in this recipe. If you are looking for a bit of excitement, try the ZESTY kind.

The VILLAGE PEPPERCORN SPINACH AND NOODLES is linguine in a cream cheese/Feta sauce with green peppercorns. It also has mushrooms and spinach and if you wish....CHICKEN.

MY healthy version of PAD THAI is rice noodles, marinated tofu & veggies stir-fried in the wok with fresh lime, ginger, sesame oil and Braggs. We garnish it all with some peanuts.

Here is a seasonal meal...the FALL CRANBERRY CHICKEN. We cook the chicken breast pieces with sweet potatoes in a sauce of fresh cranberries & sage and this is served with MASHED POTATOES.

The SWISS STEAK is sirloin tip beef slow cooked with tomatoes, onions & herbs it is served with veggies on BOILED POTATOES.

COCONUT CURRIED CHICKEN is chicken breast pieces cooked with mushrooms, spinach, coconut milk & zesty curry. This comes with BROWN BASMATI RICE

I hope to see you at the market on Saturday. We will have the "AFRICAN CHICKPEA & PEANUT STEW" for all you addicts. (You know who you are.) or wanna be addicts.

Menu for Tuesday, October 7th

Hello There,
Were you wondering if you'd ever hear from me again Well... for a while I was too. But we are back.
It's been a bit of a long haul. I'm still feeling some of the effects of the radiation, but I believe they are diminishing.
I don't have the energy that's I'm accustomed to and that is a hard one for me. But I'm taking baby steps.
I'm keen to get back into the kitchen and have "normal" in my life again.
As before, we will only deliver on Tuesday this week. And because of Thanksgiving next week, we will cook on Wednesday and deliver on Thursday. Gradually we will increase the menu size and the delivery times.
Again let me express my gratitude to you all for sending me all those great wishes and being so patient with me.


Our MEDITERRANEAN POTATO SALAD is a favorite. We are using red organic potatoes with fresh herbs, red peppers, red onion and our Olive oil-Red wine vinegar dressing. You could also have this with GRILLED CHICKEN.

ALOO CHANA is an Indian meal with chickpeas, tomatoes, potatoes, veggies and tasty seasonings served on BROWN BASMATI RICE.

Paul McCartney wasn't able to come in to make his PAUL MCCARTNEY'S VEGAN ENCHILADAS but we'll listen to some of his tunes as we make them. This is whole wheat flour tortillas filled with vegetables, spinach and crushed tofu with seasonings. It is topped with vegan sour cream and baked. It is very good!

The LIGURIAN BREAD & ROASTED GARLIC PENNE is whole wheat penne in a sauce made from bread, olive oil, red wine vinegar and roasted garlic. For the vegetarians we added some NUTS & SEEDS or you could have this with GRILLED CHICKEN.

For the CORNFLAKE CRUSTED CHICKEN we dipped the chicken pieces in some egg whites and then the crushed gluten-free cornflakes with herbs & spices. It comes with OVEN FRIES & SWEET POTATOES so this meal is gluten-free and dairy-free.

CHICKEN MARRAKESH is chicken breast pieces cooked with yummy and zesty Moroccan seasonings & coconut milk and served with either ISRAELI COUSCOUS or BROWN RICE

The
CREAMY BEEF & CHANTERELLES is sirloin tip pieces cooked in a yummy sauce with chanterelles and fresh herbs and its is served with your choice of either RICE, SPUDS which are gluten-free or EGG NOODLES.

Don't forget that you can pick up our meals all week at Timothy's!
We will be at the Market on Saturday with a yummy 'ROASTED SQUASH SOUP" and our other goodies.

finished radiation!!

Hello There,
I'm finally finished my radiation treatments!!!
All 33 of them and now that it is all over, I can say
"it wasn't so bad".
I was very lucky to have such great support and the
side effects haven't been too bad.

Right now I am experiencing quite a bit of vertigo and some nausea and I've been advised by
very smart people to not work at all for a bit while I get over this last hump so
there won't be anyone at the market this week or next and of course no meals & deliveries for a bit.

I will let you know when we are back in action.
You have been great, we appreciate all the good messages
and support and soon this will all be behind us.

Menu for Tuesday, Sept. 9

Hello There,
I'm feeling pretty good this week.
I have 9 more treatments to go so now I'm into the single digits. Yippee!
I'm up for cooking this week and Lori is here to assist me. (Actually, it is me

If you are a fan of sushi, you will enjoy the SUSHI RICE & VEGETABLE SALAD. We use organic brown rice with some crunchy veggies & pickled ginger and its all dressed with some seasoned rice vinegar with a little hint of wasabi, garnished with sesame seeds and crumbled nori.

It must be time to make your favorite SPICY THAI NOODLES WITH TOFU & PEANUT SAUCE. This is a vegetable stir-fry with rice noodles and a spicy peanut sauce topped with baked peanut tofu.

Here is a treat for you.... MAKENA'S BLACK BEAN & SPINACH. We cook the beans with spinach, onions and awesome seasonings and we serve it on BROWN BASMATI RICE.

We picked up more fresh basil and great vegetables at the market so it is
CAPPELLINI WITH FRESH PESTO & VEGGIES. We put toasted almonds in our pesto and add extra for protein unless you would prefer GRILLED CHICKEN.

Here is your comfort food...the CHICKEN STEW WITH DUMPLINGS. This is a thick flavorful chicken stew with lots of vegetables, topped with fresh herb dumplings. We are offering this without the dumplings if you are looking for gluten-free or dairy-free.

The APRICOT & GINGER GLAZED CHICKEN is always a good seller. It's not too sweet and the ginger gives it an extra burst of flavor. We are serving this on some JASMINE RICE.

I have some nice fresh pineapple and thought it would go great in BEEF & PINEAPPLE KABOBS. This also has some curry, ginger & garlic and it's served with NEW POTATOES or RICE.

The SALISBURY STEAK WITH POTATOES AND GRAVY is your comfort meal of the week. This is patties made from lean ground beef and some seasonings, slow cooked in a tasty onion gravy and served with vegetables and new potatoes.

Menu for Thursday, Sept 4th

Menu for Thursday Sept. 4th, 2008

HAIDA'S TABOULI SALAD has bulgar, tomatoes, cucumber, chickpeas, shredded carrots, fresh herbs and a lemon-olive oil dressing. Yummy!!

For the MUMBAI CURRIED TOFU, we stir-fry the marinated tofu and serve it with vegetables in a yummy sauce with ginger, lime, coconut, curry & mango. This is served on BROWN BASMATI RICE.

Our BLACK BEAN & MUSHROOM BURRITOS also has other vegetables and lots of spice. These guys are vegan but not gluten-free.

We have lovely fresh basil from the market so we're making PESTO CHICKEN. You can have this with either NEW POTATOES or RICE .

We have fresh broccoli from the Farmer's Market for GINGER BEEF BROCCOLI. It is a nice beef stir-fry with some onions and garlic served on your choice of either RICE or NOODLES.

The
GROUND BEEF CHOP SUEY is lean ground beef and vegetables in a yummy Asian sauce served with either RICE or NOODLES.

Menu for Tuesday, Aug 19

So far the radiation isn't too bad.
We are still going with a smaller menu and Tuesday is the only delivery day.

The MEDITERRANEAN COUSCOUS SALAD is one of my favorites. This is couscous, cucumbers, sun-dried tomatoes and herbs with an olive-oil lemon dressing.

Indian food is so good. Especially one of my favorites...RED LENTIL DAHL. Our dahl has a Garam Masala spice blend, some coconut milk, spinach and a nice amount of heat. We serve this on BROWN BASMATI RICE.


Do you like roasted vegetables? You gotta try the WHOLE WHEAT SPAGHETTI WITH ROASTED VEGETABLES. We are roasting eggplant, peppers, zucchini, & onions. You could also have this with GRILLED CHICKEN.

We found some nice chanterelle mushrooms at the market this week so it would be yummy in SAUCY MUSHROOM CHICKEN. This sauce also has a bit of cream and fresh herbs. Wouldn't this be nice served with NEW POTATOES?

The CURRIED BEEF & VEGETABLES is sirloin tip strips with lots of great veggies and tasty curry, served with either BROWN RICE or POTATOES.

And here is favorite for you...the CHIPOTLE ROASTED CHICKEN. we rubbed the chicken with a mix of chipolte peppers, paprika, oregano and cumin and baked it with some SWEET POTATOES and it is all served on Brown Rice.

Menu for Tuesday, Aug 12. We're Back!












Hi Everyone,
It has been a very long time since I could email you a menu.
I'm so happy to do this again.
I have started my radiation. 5 down...27 to go. I am beginning to feel the effects a bit
such as increased headaches and I feel swollen on my left side. My left ear is huge.
We are going to try to do some cooking for as long as we can. Please bear with us.

This week with will start with a smaller menu and we will only deliver on Tuesdays. Not Thursday.
If fact, it will be Margaret making the deliveries this Tuesday.
We are also at the Market with these meals and our other market specials on
Wednesdays and Saturdays.


Here is the Menu for Tuesday, August 12th, 2008

Our MARINATED VEGETABLE SALAD is organic potatoes with fresh fresh market veggies marinated in a mix of Olive oil-White wine vinegar & herbs..

If you feel like you'd like a bit extra calcium in your diet, the TAHINI TOFU is the meal for you. The tofu is dipped in a tahini sauce, then rolled in sesame seed and sauteed and served with spicy broccoli on your choice of RICE or NOODLES.

BAKED FALAFELS are so much healthier than the traditional deep-fried. We put these in WRAPS with some tahini sauce and diced tomatoes & onions.

The cheeses in the BAKED PENNE WITH 3 CHEESE SAUCE AND BROCCOLI are Cheddar, Parmesan and Cream cheese. This dish is also available with CHICKEN.

Here is a real summer meal for you...HERB ROASTED CHICKEN. We tossed the chicken breasts with fresh Farmer's Market herbs and olive oil before roasting and we're serving this with NEW POTATOES. Also tossed with herbs and a bit of olive oil. "I love summer!"

Lori loves to make the CARIBBEAN PINEAPPLE CHICKEN. This is chicken breast pieces baked with fresh pineapple and Caribbean spices and SWEET POTATOES and we serve it on a bed of BROWN RICE & BEANS

And the BEEF & VEGETABLE BURRITOS are whole wheat tortillas filled with lean ground beef, vegetables and spices and garnished with some sour cream and salsa.

Update August 1

Hello There,
It has been some time since I sent an update, but there wasn't too much to report.
I'm starting to feel a bit better but I tire pretty easy.
I have been spending a little time in the kitchen and I keep wanting
to spend more time, but my body is saying "not yet".
I have prepared some meals such as
Pesto chicken with Brown Rice or Linguine
Curried Chickpeas on Brown Rice
Ground Beef & Noodle Bake
Cheese & Swiss Chard Lasagna
These meals will be available at the Farmer's Market tomorrow
as well as a yummy "Vegetable Soup" made with ingredients from
the Farmer's Market. We also have some hummus this week.
Our intention is to have a selection of half a dozen or so meals at the market on Wednesdays and Saturdays.
I am starting my radiation treatments on Monday for 6 weeks. From what I understand,
the side effects may be pretty severe, but we will do what we can and we will keep you posted.

post surgery

Hi Everyone,
This is just a little note to let you know we are back from Halifax
Everything went pretty good despite a few surprises.
The surgeons found another tumor wrapped around
the facial nerves. They had to do quite a bit of digging and manipulating to
get it out. They feel they got most of it but I will have to go for radiation
treatment asap. At this point I have most movement back but there is some weakness on the left side of my
face. I can't feel my left ear at all and there is patchy numbness on that side.
There is quite a depression in my neck (although it is hard to see right now because it is swelled)
where they removed the gland.
We are both very happy to be home and are relieved to be on the road to recovery.
We thank you for all your prayers & good wishes.
I'm still hoping to be back in the kitchen on July 7th, but I will keep you posted.
