The effects of the radiation are catching up to me.

Menu for Tuesday, Aug 19












Hello!
We are up for more cooking this week.
So far the radiation isn't too bad.
We are still going with a smaller menu and Tuesday is the only delivery day.
And it will be Margaret making the deliveries again this Tuesday.
But don't fortget we at the Market with these meals and our other market specials on
Wednesdays and Saturdays.

Here is the Menu for Tuesday, August 19th, 2008

The MEDITERRANEAN COUSCOUS SALAD is one of my favorites. This is couscous, cucumbers, sun-dried tomatoes and herbs with an olive-oil lemon dressing.

MY healthy version of PAD THAI is rice noodles, marinated tofu & veggies stir-fried in the wok with fresh lime, ginger, sesame oil and Braggs. We garnish it all with some peanuts.

Indian food is so good. Especially one of my favorites...RED LENTIL DAHL. Our dahl has a Garam Masala spice blend, some coconut milk, spinach and a nice amount of heat. We serve this on BROWN BASMATI RICE.


Do you like roasted vegetables? You gotta try the WHOLE WHEAT SPAGHETTI WITH ROASTED VEGETABLES. We are roasting eggplant, peppers, zucchini, & onions. You could also have this with GRILLED CHICKEN.

We found some nice chanterelle mushrooms at the market this week so it would be yummy in SAUCY MUSHROOM CHICKEN. This sauce also has a bit of cream and fresh herbs. Wouldn't this be nice served with NEW POTATOES?

The CURRIED BEEF & VEGETABLES is sirloin tip strips with lots of great veggies and tasty curry, served with either BROWN RICE or POTATOES.

And here is favorite for you...the CHIPOTLE ROASTED CHICKEN. we rubbed the chicken with a mix of chipolte peppers, paprika, oregano and cumin and baked it with some SWEET POTATOES and it is all served on Brown Rice.

Menu for Tuesday, Aug 12. We're Back!












Hi Everyone,
It has been a very long time since I could email you a menu.
I'm so happy to do this again.
I have started my radiation. 5 down...27 to go. I am beginning to feel the effects a bit
such as increased headaches and I feel swollen on my left side. My left ear is huge.
We are going to try to do some cooking for as long as we can. Please bear with us.

This week with will start with a smaller menu and we will only deliver on Tuesdays. Not Thursday.
If fact, it will be Margaret making the deliveries this Tuesday.
We are also at the Market with these meals and our other market specials on
Wednesdays and Saturdays.


Here is the Menu for Tuesday, August 12th, 2008

Our MARINATED VEGETABLE SALAD is organic potatoes with fresh fresh market veggies marinated in a mix of Olive oil-White wine vinegar & herbs..

If you feel like you'd like a bit extra calcium in your diet, the TAHINI TOFU is the meal for you. The tofu is dipped in a tahini sauce, then rolled in sesame seed and sauteed and served with spicy broccoli on your choice of RICE or NOODLES.

BAKED FALAFELS are so much healthier than the traditional deep-fried. We put these in WRAPS with some tahini sauce and diced tomatoes & onions.

The cheeses in the BAKED PENNE WITH 3 CHEESE SAUCE AND BROCCOLI are Cheddar, Parmesan and Cream cheese. This dish is also available with CHICKEN.

Here is a real summer meal for you...HERB ROASTED CHICKEN. We tossed the chicken breasts with fresh Farmer's Market herbs and olive oil before roasting and we're serving this with NEW POTATOES. Also tossed with herbs and a bit of olive oil. "I love summer!"

Lori loves to make the CARIBBEAN PINEAPPLE CHICKEN. This is chicken breast pieces baked with fresh pineapple and Caribbean spices and SWEET POTATOES and we serve it on a bed of BROWN RICE & BEANS

And the BEEF & VEGETABLE BURRITOS are whole wheat tortillas filled with lean ground beef, vegetables and spices and garnished with some sour cream and salsa.

Update August 1

Hello There,
It has been some time since I sent an update, but there wasn't too much to report.
I'm starting to feel a bit better but I tire pretty easy.
I have been spending a little time in the kitchen and I keep wanting
to spend more time, but my body is saying "not yet".
I have prepared some meals such as
Pesto chicken with Brown Rice or Linguine
Curried Chickpeas on Brown Rice
Ground Beef & Noodle Bake
Cheese & Swiss Chard Lasagna
These meals will be available at the Farmer's Market tomorrow
as well as a yummy "Vegetable Soup" made with ingredients from
the Farmer's Market. We also have some hummus this week.
Our intention is to have a selection of half a dozen or so meals at the market on Wednesdays and Saturdays.
I am starting my radiation treatments on Monday for 6 weeks. From what I understand,
the side effects may be pretty severe, but we will do what we can and we will keep you posted.
Again I thank you for you patience, understanding, prayers and support.
