Menu for Jan. 13 2009

Hello There,
I hope you enjoyed the week-end. Check out this week's menu below. We hope you find some nice choices.

The
BLACK BEAN & MANGO SALAD is black beans, peppers, corn, green onion & mango in a lime-cilantro dressing.

For all you fans of "PAUL MCCARTNEY'S VEGAN ENCHILADAS"...they are back. For those of you are not fans yet, try something new. This is whole wheat flour tortillas filled with vegetables, spinach and crushed tofu with seasonings. It is topped with vegan sour cream and baked. Those who like it, like it alot.

Our
MUSHROOM & LENTIL PATTIES have red & green lentils as well as the mushrooms, onions, flax seed & seasonings. We served this with RICE PILAF.

RASTA PASTA is a nice change with Carribean influence. We use Angel Hair Pasta and the sauce is sweet potatoes, coconut milk and Caribbean spices. We topped it with a colorful mix of vegetables. You may have this meal with GRILLED CHICKEN also.

The
EGGPLANT PARMIGIANA is one of my favorites. We bread the eggplant with seasoned wheatgerm and cover it with a mix of Mozza-Feta-Parmesan cheeses. We bake it and serve it with PASTA & our own TOMATO SAUCE.

We use our own sauce for the
OVEN BARBECUED CHICKEN. It is baked with Farmer's Market SPUDS & SQUASH.

The
SAUCY BEEF & MUSHROOMS is slow-cooked to make it nice and tender and also includes onions and herbs. You may have this with your choice of POTATOES or RICE.

The
APRICOT ALMOND CHICKE has some African flavors with some cumin, coriander, turmeric & cinnamon. Would you prefer this with ORGANIC BROWN RICE or ISRAELI COUSCOUS?

The
GROUND BEEF & POTATO CURRY has lots of veggies as well as some spice to it. This is served with BROWN RICE.
