Menu for January 27

Hello there,
We have some nice choices for you this week. Some are favorites and there are some new items. You can check it all out below.

We have the GREEK PASTA SALAD for you again this week. This is fusilli with peppers, red onion, cucumber, tomatoes, black olives and Feta cheese with our own Greek dressing. We also have it with CHICKEN.

Our CURRIED WILD RICE & SWEET POTATO RISOTTO isn't really like traditional risotto. This meal has a mix of Thai Red rice as well as the wild rice, there is also some onions & a few currants and apricots so this meal is more sweet that spicy.

We use whole wheat tortillas for the MUSHROOM & BLACK BEAN BURRITOS which also have some onions, peppers and carrots. It is garnished with some zesty salsa.

I don't think we've made the
LEMON-CAPER CAPPELLINI before. In case you are wondering, capers are small unripened flower buds from a Mediterranean bush which are dried and then marinated in a brine. They are a bit salty and sour. The sauce for this pasta has fresh lemon juice and zest, a bit of honey, dill and the capers. You can have this with Grilled Chicken or some toasted almonds.

If you like tahini, this SESAME LO MEIN & TOFU is for you. The marinated tofu is stir-fried with fresh veggies and served with the tahini sauce on either MILLET or RICE NOODLES.

We thought it was time for a vegan lasagna so how about
VEGAN TOFU & ARTICHOKE LASAGNA. We use whole wheat noodles, some artichokes and black olives, our own tomato sauce and substitute a tofu filling instead of the cottage cheese. We topped this with a tasty cashew mix.

It feels like a good week for comfort food in the form of
ROAST CHICKEN DINNER WITH POTATOES & GRAVY. You get some white and dark meat, some wild rice stuffing, veggies, potatoes & gravy and it is all gluten-free How does that sound to you?

Here is another new dish, the
MOROCCAN BEEF & SWEET POTATO STEW is sirloin tip strips, sweet potatoes, tomatoes, onions & those yummy Moroccan seasonings slow cooked and served with COUSCOUS or RICE.

Your mouth will be watering when you hear that we have ANN'S MAPLE CHICKEN on this week's menu. The chicken is cooked with some mushrooms and peppers in a delicious creamy maple sauce. Have this with either JASMINE RICE or PENNE.

Here is more comfort food... the SALISBURY STEAK WITH MASHED POTATOES AND GRAVY is patties made from lean ground beef and some seasonings, slow cooked in a tasty onion gravy and served with vegetables and mashed potatoes.
