Menu for Jan 20

Greetings!
What a cold snap eh? I hope you were warm and cosy.
We are keeping warm by the stove cooking up yummy food for you. Read all about it below.....

We had HAIDA home for Christmas and she teased us with some of her special TABOULI SALAD. I hope I can do it justice. This salad has whole wheat bulgur, lots of parsley, chickpeas, grated carrots and a lemon-olive oil dressing.

It seems like a good time to make some heart-warming CHILI . We're going to make 2 types, the VEGETARIAN CHILI has some millet in it for some extra protein and the BEEF & VEGETABLE CHILI for the meat lovers. Both get lots of vegetables and beans and great flavor.

Here is some comfort food to try...the TOFU SHEPERDESS PIE. This is marinated tofu and lots of Farmer's Market vegetables cooked in a savory herb sauce, topped with a combination of regular and sweet potatoes.

Now here is a neat pasta idea....the LIGURIAN BREAD & GARLIC PENNE looks awesome! The penne is tossed with a sauce using olive oil, red wine vinegar & roasted garlic and it is thickened with breadcrumbs. We garnished this with fresh tomatoes & Parmesan Cheese. We also have this with some GRILLED CHICKEN.

I guess it is high time for this favorite....the SPICY THAI NOODLES WITH TOFU & PEANUT SAUCE. We have rice noodles, vegetables, & marinated tofu in a awesome peanut sauce. We also have this meal with CHICKEN if you like.

Here is your chance for some yummy comfort food but way lighter in calories than Mom's. For our CHICKEN & DUMPLINGS we are using both chicken breast and leg meat for this, with lots of yummy veggies in a great sauce topped with lovely light dumplings. You can also have this without dumplings and call it CHICKEN STEW you wish for gluten-free.

The
TERIYAKI BEEF is sirloin tip slices stir-fried with lots of vegetables in a slightly sweet Asian sauce served with BROWN RICE or WHEAT NOODLES.

So this BETTER BUTTER CHICKEN is better than the traditional Indian Butter Chicken because we revamped it and made it healthier. But it is still just as tasty and spicy. This meal has some of our home-made yogurt in it and is served on BROWN BASMATI RICE.
