Menu for Tuesday, Jan 6th Happy New Year!

HAPPY NEW YEAR!
Did you all have a good holiday? I sure did. Lots of good family, food and books and of course snow.

Let's start of the new year with some good healthy choices.
Check them out and let us know what you'd like us to drop off to you on Tuesday, or you can pop into Timothy's any day and pick it up.

Our SUSHI RICE SALAD has all the flavors of sushi. We use short grain brown rice and add lots of crunchy vegetables, some nori, pickled ginger, sesame seeds and a dressing of seasoned rice vinegar and wasabi.

CURRIED COCONUT CHICKPEAS also has some caramelized onions and cilantro and a bit of cayenne. It is saucy so it will be very nice on a bed of BROWN BASMATI RICE.

PASTA BROUGHT TO YOU BY THE LETTER "P" is something I tried over the holidays with great success. We use whole wheat spaghetti and toss it with Pesto made with Parsley, Pumpkin seeds, Peppercorns topped with sweet Peppers. As usual you can also have this with some grilled Poultry.

TOFU KOHLAPURI is an Indian dish traditionally made with chicken but tofu is a good substitute. There is lots of great spices in this meal including jalapeno peppers and it has a tomato base. We are serving it on BROWN BASMATI RICE.

MOROCCAN SPINACH & RICE PIE has a brown rice & cheese layer on the bottom, then some spiced tomato sauce, then some spinach sauteed with onions and raisins, and it's all topped with some Mozzarella before we bake it. This is a great meal with interesting flavors.

The OVEN BAKED CORNFLAKE CHICKEN is chicken breasts dipped in some egg white and then into seasoned cornflake crumbs and baked. It is served with oven baked potatoes & sweet potatoes. This meal is gluten-free and dairy-free.

Here is a good way to combine mango & chicken, CURRIED MANGO & CASHEW CHICKEN STIR-FRY. This chicken stir-fry has lots of great flavors with fresh mangoes as well as ginger and some rice vinegar and of course the curry & cashews. We are serving this on JASMINE RICE.

I have this awesome pineapple to use up so how about PINEAPPLE & PEPPER BEEF KABOBS. This is marinate beef, pineapple and sweet peppers on a skewer and cooked on the grill. It comes with RICE or POTATOES.

SASSY SAUSAGE is tri-colored rotini with our tomato sauce and some Italian Sausage.

The SAVOURY SHEPHERD'S PIE is lean ground beef with gravy, a nice mix of vegetables and it is topped with mashed potatoes. This meal is gluten-free.
