Menu for Tuesday, Oct. 28

Greetings again from the Eat Well kitchen,
We're up for cooking some yummy meals for you.

This salad seems kind of Fallish to me. For the QUINOA & SWEET POTATO SALAD we sauteed the sweet potatoes with some onions and garlic and added it to the quinoa with some peppers, cilantro and a dressing of lemon juice and maple syrup.

We marinated the TOFU in a ZESTY CURRY & LEMONGRASS marinade and seared it in the wok with veggies and put it all on a bed on BROWN BASMATI RICE.

We have Lori on CABBAGE ROLLS this week. You have 2 choices, either VEGETARIAN or BEEF & RICE. The VEGETARIAN has chickpeas, rice, veggies and nice seasonings. For the beef we substituted the chickpeas for lean ground beef. Both are slow-cooked in the oven with our own tomato sauce.

Our CHEESY PASTA PRIMAVERA is rotini and lots of stir-fried veggies in a creamy tomato sauce topped with some herbed Mozzarella and Feta Cheeses. Of course we have this with CHICKEN too.

We marinate the tofu for the HONEY GARLIC TOFU KABOBS overnight to intensify the flavor and put the it and some vegetables on skewers and grilled them with our special honey-garlic sauce. This is served on a bed of RICE PILAF.

The CHICKEN & VEGETABLE SHEPHERD'S PIE was so very popular the last time we made it that we're happy to make it for you again. This is chicken cooked with vegetables in a tasty sauce and topped with whipped potatoes. Talk about comfort food!

SLOW-COOKED POT ROAST WITH POTATOES AND GRAVY is our comfort food of the week. We are slow cooking the roast with potatoes and vegetables and serving it with a yummy gravy.

The CARIBBEAN CHICKEN WITH SWEET POTATOES is chicken marinated with Caribbean spices and then cooked with fresh pineapple and sweet potatoes. It is served on a bed of Brown rice with Beans.
