Menu for Tuesday, October 7th

Hello There,
Were you wondering if you'd ever hear from me again Well... for a while I was too. But we are back.
It's been a bit of a long haul. I'm still feeling some of the effects of the radiation, but I believe they are diminishing.
I don't have the energy that's I'm accustomed to and that is a hard one for me. But I'm taking baby steps.
I'm keen to get back into the kitchen and have "normal" in my life again.
As before, we will only deliver on Tuesday this week. And because of Thanksgiving next week, we will cook on Wednesday and deliver on Thursday. Gradually we will increase the menu size and the delivery times.
Again let me express my gratitude to you all for sending me all those great wishes and being so patient with me.


Our MEDITERRANEAN POTATO SALAD is a favorite. We are using red organic potatoes with fresh herbs, red peppers, red onion and our Olive oil-Red wine vinegar dressing. You could also have this with GRILLED CHICKEN.

ALOO CHANA is an Indian meal with chickpeas, tomatoes, potatoes, veggies and tasty seasonings served on BROWN BASMATI RICE.

Paul McCartney wasn't able to come in to make his PAUL MCCARTNEY'S VEGAN ENCHILADAS but we'll listen to some of his tunes as we make them. This is whole wheat flour tortillas filled with vegetables, spinach and crushed tofu with seasonings. It is topped with vegan sour cream and baked. It is very good!

The LIGURIAN BREAD & ROASTED GARLIC PENNE is whole wheat penne in a sauce made from bread, olive oil, red wine vinegar and roasted garlic. For the vegetarians we added some NUTS & SEEDS or you could have this with GRILLED CHICKEN.

For the CORNFLAKE CRUSTED CHICKEN we dipped the chicken pieces in some egg whites and then the crushed gluten-free cornflakes with herbs & spices. It comes with OVEN FRIES & SWEET POTATOES so this meal is gluten-free and dairy-free.

CHICKEN MARRAKESH is chicken breast pieces cooked with yummy and zesty Moroccan seasonings & coconut milk and served with either ISRAELI COUSCOUS or BROWN RICE

The
CREAMY BEEF & CHANTERELLES is sirloin tip pieces cooked in a yummy sauce with chanterelles and fresh herbs and its is served with your choice of either RICE, SPUDS which are gluten-free or EGG NOODLES.

Don't forget that you can pick up our meals all week at Timothy's!
We will be at the Market on Saturday with a yummy 'ROASTED SQUASH SOUP" and our other goodies.
