Menu for Dec 2

Greetings again from the Eat Well Kitchen, where we are always happy to cook up great goodies for you.

Raymond Loo who is a potato expert, recommended that I use his organic Fabula potatoes for the FRENCH POTATO SALAD. This is potatoes, peppers, celery, green onions & fresh dill with white wine vinegar, grainy mustard and herbs.

If you are looking for some delicious protein, give the TOFU, QUINOA & S
WEET POTATOES a whirl. This is a nice light meal and quinoa is so good for you and tasty too.

Here is something yummy, especially if you are a fan of caramelized onions, the WHITE BEAN & VEGETABLE CASSOULET has a tomato base and lots of great flavors. The topping is June-Ellen's Spelt-Carrot bread crumbs.

O.K. this week's pasta dish is a very good one. It is WHOLE WHEAT SPAGHETTI, tossed with caramelized onions seasoned with some fresh rosemary, some sun-dried tomatoes and spinach. For the vegetarians, you get some nuts for protein and if you like GRILLED CHICKEN, we have that too.

I'm a fan of the INDONESIAN TOFU, VEGETABLE & RICE STIR-FRY. It is marinated tofu stir-fried with peppers, onions and carrots and organic brown rice with a zesty peanut sauce.

I know some of you have been waiting for me to make you KEN'S "FULL OF CHEESE" VEGGIE SQUARES so here it is. This is a low carb, low fat, gluten-free yet very yummy meal that is a mix of almost every vegetable I can find, covered with Mozza, Cheddar, Parmesan & Feta cheeses and baked.

he herbs I picked up this week match the song from SIMON & GARFUNKLE's Parsley, Sage & Rosemary & Thyme. So those are the herbs we are tossing with the CHICKEN before roasting. We're serving this with SCALLOPED POTATOES or RICE.

Our other chicken choice is CHICKEN BIRYANI. This is a traditional Pakistan/Indian dish of tender morsels of chicken in a creamy, spicy blend of onion, garlic, ginger, tomatoes, soy yogurt and spices served with SPICED RICE. This meal is both gluten-free and diary-free.

The BEEF, CHEESE & VEGETABLE SWIRLS are pastries made from whole wheat and unbleached white flours filled with lean ground beef, tomatoes, peppers, onions, cheddar and seasonings.

The SAUSAGE SHEPHERD'S PIE has a base of Italian sausage and vegetables lightly seasoned with some curry and it is topped with a mix of mashed SWEET POTATOES & SQUASH.

We are gearing up for Christmas. We intend to make your "Sticky Date Pudding" again this year.

You have the choice of the 8x8 for $28 or 9X11 for $45. 8 oz of extra sauce is $5
